The spices:

Aleppo Pepper — Harvested in Syria and Turkey, these chilli flakes deliver a gentle, cherry-tinged heat with a subtle saltiness — ideal for lifting dressings, marinades and roasted vegetables.

Baharat — A warming, complex spice blend drawing on allspice, black pepper, cardamom, cassia, cloves, coriander, cumin, nutmeg and paprika. Rub generously into lamb or chicken before grilling or slow-roasting.

Harissa — This bold North African blend combines dried red chilli, garlic, coriander, paprika and caraway into a fiery, fragrant mix. Stir through olive oil for a punchy dressing, or use as a marinade for meat and fish.

Shawarma — Deeply aromatic and richly spiced, this classic street-food blend was made for marinating meats. Use it on chicken, lamb or beef before grilling, roasting or wrapping.

Sumac — Bright, tangy and unmistakably citrusy, sumac adds a sharp lift to salads, hummus and grilled meats. One of the most versatile spices in Middle Eastern cooking.

Urfa Chilli — Slow-dried under the Turkish sun, this dark, crinkled pepper carries a deep, smoky warmth with notes of raisin. Exceptional scattered over hummus or rubbed into lamb.

Za'atar — The cornerstone of Middle Eastern cooking. This fragrant, earthy blend of oregano, marjoram, sumac, salt and SESAME seeds is as good on flatbreads as it is on roasted chicken.
