The spices:
Garam Masala — The backbone of Indian cooking. This warming, aromatic blend is added at the end of cooking to layer in depth and fragrance. Every family has their own version.
Cassia Bark — Sweeter and more robust than cinnamon, cassia bark adds a gentle woody warmth to slow-cooked curries, biryanis and spiced rice dishes.
Chilli Powder — A staple of Indian cooking, this brings the heat. Use sparingly for a gentle warmth or more generously for a fiery kick — it's the cook's call.
Cumin Seeds — One of the most essential spices in the Indian kitchen. Toast them in hot oil at the start of cooking to release their nutty, earthy aroma and build a flavour base for curries and dals.
Coriander Powder — Mild, citrusy and slightly sweet, ground coriander adds body and balance to spice blends and sauces. A quiet workhorse that makes everything taste more rounded.
Mustard Seeds — Drop these into hot oil and listen for the pop — that's when the magic happens. They add a nutty, peppery depth to curries, chutneys and vegetable dishes.
Turmeric Powder — Earthy, slightly bitter and brilliantly golden, turmeric is as good for colour as it is for flavour. A small pinch goes a long way in dals, curries and rice.
Cloves — Intensely aromatic and warming, cloves are used whole in slow-cooked dishes to infuse deep, spiced flavour. Remove before serving — they pack a punch.
Cardamom Pods — Fragrant, floral and faintly sweet, cardamom lifts both savoury dishes and desserts. Crack the pods before adding to release the full aroma of the seeds inside.
